Almond Butter Cookies
Almond Butter Cookies
Makes 6 large cookies!
Ingredients:
- 2 tablespoons flax meal
- 3 tablespoons water
- 1 cup almond butter
- 1 cup coconut sugar
- 1 tablespoon baking powder
- pinch of sea salt
Directions
- Make your vegan egg: Mix flax meal and water together in a small bowl and set aside for 5 minutes.
- Preheat oven to 350° and grease your cookie sheet.
- Mix almond butter and coconut sugar together.
- Add vegan egg and beat with hand mixer or kitchenaid for 1-2 minutes.
- Add baking powder and sea salt, beat for another 30-60 seconds.
- Scoop cookies onto the pan. (Note: I used a 1⅝ ounce scoop to get 6 equally sized cookies.)
- Bake for 12-15 minutes, until the bottom and edge of the cookies are golden brown.
- Let cool completely before serving or eating.
