Almond Butter Cookies

Almond Butter Cookies

Makes 6 large cookies!


  • 2 tablespoons flax meal
  • 3 tablespoons water
  • 1 cup almond butter
  • 1 cup coconut sugar
  • 1 tablespoon baking powder
  • pinch of sea salt


  1. Make your vegan egg: Mix flax meal and water together in a small bowl and set aside for 5 minutes.
  2. Preheat oven to 350° and grease your cookie sheet.
  3. Mix almond butter and coconut sugar together.
  4. Add vegan egg and beat with hand mixer or kitchenaid for 1-2 minutes.
  5. Add baking powder and sea salt, beat for another 30-60 seconds.
  6. Scoop cookies onto the pan. (Note: I used a 1⅝ ounce scoop to get 6 equally sized cookies.)
  7. Bake for 12-15 minutes, until the bottom and edge of the cookies are golden brown.
  8. Let cool completely before serving or eating.
