Instructions:

  3. Prepare the White Layer:
    • In a separate saucepan, heat the coconut milk over medium heat until warm.
    • Sprinkle the agar agar powder over the coconut milk while stirring continuously.
    • Bring the mixture to a boil, then reduce the heat and simmer for 2-3 minutes, stirring constantly.
    • Remove from heat and let the mixture cool slightly.
  4. Pour the White Layer:
    • Once the red layer is set, carefully pour the white mixture over the red layer in the shot glasses, filling each about two-thirds of the way.
    • Return the shot glasses to the refrigerator to set while you prepare the final layer.
  5. Prepare the Blue Layer:
    • In another saucepan, heat the blueberry juice over medium heat until warm.
    • Sprinkle the agar agar powder over the juice while stirring continuously.
    • Bring the mixture to a boil, then reduce the heat and simmer for 2-3 minutes, stirring constantly.
    • Remove from heat and let the mixture cool slightly.
  6. Pour the Blue Layer:
    • Once the white layer is set, carefully pour the blueberry mixture over it in the shot glasses, filling each to the top.
    • If desired, add a splash of tequila to each shot for an extra kick of flavor.
  7. Chill and Serve:
    • Return the shot glasses to the refrigerator and chill for at least 2-3 hours, or until completely set.
