Tomato Basil Bisque Paleo | Whole30
Preparation Time: 15 minutes
Cook Time: 45 minutes
Yield: 6-8 serving
Ingredients:
- 1 small onion, diced
- 3 large carrots, thinly sliced
- 3 celery stalks, thinly sliced
- ¼ cup avocado oil
- 3 garlic cloves, minced
- 1 quart vegetable broth
- 4 lbs roma tomatoes, quartered lengthwise
- 3 tablespoons dried basil
- 1 ½ tablespoon dried parsley
- 1 teaspoon dried oregano
- ⅔ cup cashew ricotta
- 1-2 tablespoon sea salt
Directions
- In a large soup pot, add diced onion, sliced carrots, sliced celery and avocado oil. Turn heat on medium high, and saute until onions are translucent. About 6-8 minutes.
- Add garlic, and saute for another 3 minutes.
- Add broth, basil, parsley, and oregano to the pot, and bring to a boil.
- Add the roma tomatoes to the boiling broth, and reduce to a simmer. Cover with a lid and simmer for 20 minutes. Stir occasionally so all the tomato skins breakdown.
- Remove from heat. Add ricotta, and stir it in slightly. Blend with a hand blender, or with a high powered blender until smooth.
- Serve warm, and enjoy all the healing benefits!
