Tomato Basil Bisque Paleo | Whole30

Preparation Time: 15 minutes

Cook Time: 45 minutes

Yield: 6-8 serving


  • 1 small onion, diced
  • 3 large carrots, thinly sliced
  • 3 celery stalks, thinly sliced
  • ¼ cup avocado oil
  • 3 garlic cloves, minced
  • 1 quart vegetable broth
  • 4 lbs roma tomatoes, quartered lengthwise
  • 3 tablespoons dried basil
  • 1 ½ tablespoon dried parsley
  • 1 teaspoon dried oregano
  • ⅔ cup cashew ricotta
  • 1-2 tablespoon sea salt


  1. In a large soup pot, add diced onion, sliced carrots, sliced celery and avocado oil. Turn heat on medium high, and saute until onions are translucent. About 6-8 minutes.
  2. Add garlic, and saute for another 3 minutes.
  3. Add broth, basil, parsley, and oregano to the pot, and bring to a boil.
  4. Add the roma tomatoes to the boiling broth, and reduce to a simmer. Cover with a lid and simmer for 20 minutes. Stir occasionally so all the tomato skins breakdown.
  5. Remove from heat. Add ricotta, and stir it in slightly. Blend with a hand blender, or with a high powered blender until smooth.
  6. Serve warm, and enjoy all the healing benefits!
