Perfect Paleo Pesto

Perfect Paleo Pesto
Makes ~1 quart of pesto sauce!
Ingredients:
- 1 cup cashew pieces
- 1 cup olive oil*
- 3 cups basil leaves
- 1 cup parsley
- 2 lemons, juiced
- 10 garlic cloves
- ½ teaspoon sea salt
Directions
- Place cashews, olive oil, basil, parsley, lemon juice, garlic, sea salt into a food processor or high powered blender. Turn on high and blend until everything is incorporated, about 2-3 minutes. Stop and wipe down sides as needed to ensure all ingredients blend evenly.
- Store in an airtight container in the refrigerator for 1-2 weeks or in the freezer for up to 4 months.
* This recipe is made with olive oil, so it can be heated up safely for cooking. If consuming cold you can substitute extra virgin olive oil for olive oil.
