Hot Dog Buns

Hot Dog Buns

Ingredients:

  • 1⁄2 cup unsweetened coconut yogurt (I use Coyo)
  • 2 eggs
  • 1 1⁄4 cup almond meal
  • 1 tablespoon flax meal
  • 1 tablespoon baking powder
  • 2 teaspoons guar gum
  • 1⁄2 teaspoon sea salt

Directions:

  1. In a large mixing bowl, add yogurt and eggs and whisk until smooth and incorporated.
  2. Add almond meal, flax meal, baking powder, guar gum, and sea salt to wet ingredients and mix with a wooden or your hands.
  3. Once the ball of dough has formed grease a cookie sheet pan, and preheat oven to 375.
  4. Form 3 hot dog buns and place them side by side, touching, on the pan.
  5. Cover with a damp cloth, and let rise for 10 minutes.
  6. Take cloth off, and bake for 30-40 minutes. (The bottoms will be browned.)
  7. Let cool on a cooling rack completely before slicing halfway through the middle to easily insert the hot dog.
