Vegan Espresso  Brownies

Espresso Brownies

Preparation Time: 25 minutes
Cook Time: 22-26 minutes
Yield: 12-16 brownies

Ingredients:

  • 1¼ cup brown rice flour
  • ¾ cup arrowroot starch
  • ¾ cup raw cacao powder
  • 2 cups beet sugar
  • ¼ cup espresso grounds
  • 1 teaspoon baking powder
  • 1 teaspoon guar gum
  • 1 teaspoon sea salt
  • 1 cup water
  • 1 cup olive or avocado oil

Directions

  1. Preheat oven to 350°F
  2. Grease a 13×9 pan.
  3. In a bowl place brown rice flour, arrowroot starch, cacao powder, beet sugar, espresso, baking powder, guar gum and salt and mix with a wooden spoon.
  4. Add water and oil to dry ingredients and stir about 25-35 strokes.
  5. Pour batter into greased pan, spreading evenly, and bake for 22-26 minutes.
  6. Let cool completely before cutting or serving.
