Pecan Pie Bites Vegan | Raw

Pecan Pie Bites Vegan | Raw

Ingredients:

  • 1 c dates, soaked
  • ¾ c pecans, soaked
  • ⅜ c date water
  • 1 tbsp maple syrup
  • 2 tsp cinnamon
  • ¼ c organic vanilla sunwarrior protein
  • 1 ½ c almond flour
  • ½ c dry pecans, chopped and dry

Directions

  1. Soak ¾ c pecans & dates for 2 hours up to 24 hours. Drain pecans. Drain dates and reserve the date water.
  2. Place dates, pecans, ⅜ c date water and maple syrup into a high powered blender or food processor. Blend on high until smooth, wiping down the edges if needed to get all the chunks blended.
  3. Place pecan paste in a large bowl with the cinnamon, protein powder, almond flour and chopped pecans. Mix well with a wooden spoon until incorporated.
  4. Scoop ¾ -1 oz balls into an airtight container.
  5. Refrigerate for 10 minutes before serving.
