Basic Paleo Sandwich Bread

Basic Paleo Sandwich Bread

Ingredients:

  • 1 1/2 cups water
  • 1/4 cup honey (or maple syrup)
  • 2 tbsp dry active yeast
  • 1/4 cup avocado oil
  • 1 tbsp Apple cider vinegar
  • 3 eggs
  • 2 1/2 cups cassava flour
  • 1 1/2 cups arrowroot starch
  • 1/2 cup almond meal
  • 1 tsp guar gum
  • 2 tbsp baking powder
  • 1 tsp sea salt

Directions

  1. Preheat oven to 350°F. Grease loaf pan or 15 muffin tins.
  2. Heat water to 110°F, add honey (or maple syrup) and yeast, then let stand for 10 minutes.
  3. Add oil, vinegar and eggs and stir.
  4. Add cassava flour, arrowroot, almond meal, guar gum, baking powder and sea salt and mix until dough forms. Should be consistency of soft serve ice cream.
  5. Pour into prepared pan.
  6. Bake loaf for 50-55 minutes, or, bake rolls in the muffin tins for 25-28 minutes.
  7. Let it cool completely before serving or slicing.
