Banana Bee Bites

Ingredients:

  • 2 cups dates, soaked in 2 cups water
  • 2 bananas
  • 1 1⁄4 cups almond meal
  • 1 1⁄2 cups vanilla protein (I use Ora or Sunwarrior)
  • 2 tablespoons bee pollen powder
  • 2 tablespoons chia seeds
  • 1⁄4 teaspoon ground cinnamon

Directions

  1. Soak dates in water for 2-24 hours. Drain before using.
  2. Add dates and bananas to high powered blender or food processor, and blend on high until smooth (about 1-2 minutes).
  3. Add date/banana puree to large bowl. Add almond meal, vanilla protein, bee pollen, chia seeds and cinnamon to bowl with puree. Stir until dough forms. *I use homemade almond meal, if your dough is too wet add more almond meal until desired thickness.
  4. Scoop bites into airtight container with desired sized scoop. (I use a 1 oz scoop.)
  5. Cover and refrigerate or freeze until ready to eat.
