Pumpkin Spice Energy Bites

Ingredients

  • 2 cups water
  • 3 cups dates
  • 1 cup pumpkin puree
  • 2 tbsp pumpkin spice
  • 4.5 cups oats
  • 1.4 tsp sea salt

Directions

  1. Soak dates in water for 2-24 hours.
  2. Add dates and date water to a high-powered blender, turn on high and process until smooth.
  3. Add date paste, pumpkin puree, pumpkin spice, oats, and salt to a bowl and mix with a wooden spoon until dough forms.
  4. Add more water if needed to roll into a soft ball.
  5. Scoop desired sized bites into an airtight container.
  6. Refrigerate at least 10 minutes before serving.
