Pumpkin Spice Energy Bites
Ingredients
- 2 cups water
 - 3 cups dates
 - 1 cup pumpkin puree
 - 2 tbsp pumpkin spice
 - 4.5 cups oats
 - 1.4 tsp sea salt
 
Directions
- Soak dates in water for 2-24 hours.
 - Add dates and date water to a high-powered blender, turn on high and process until smooth.
 - Add date paste, pumpkin puree, pumpkin spice, oats, and salt to a bowl and mix with a wooden spoon until dough forms.
 - Add more water if needed to roll into a soft ball.
 - Scoop desired sized bites into an airtight container.
 - Refrigerate at least 10 minutes before serving.
