Sweet Potato Apple Muffins
Makes 9 Muffins
Ingredients:
- Vegan egg; 1 ½ tbsp flax meal + 2 tbsp water
 - 1 c brown rice flour
 - ¾ c arrowroot starch
 - 1 tsp guar gum
 - 3 tbsp baking powder
 - 2 tbsp pumpkin spice
 - ½ teaspoon turmeric powder
 - 1 tsp salt
 - ½ c avocado oil
 - ½ c maple syrup
 - ¾ c sweet potato puree
 - 1 tsp vanilla
 - ¼ c unsweetened almond milk
 - 1 cup apple, small diced with skin on
 
Cinnamon sugar topping
Directions
- Mix together and set aside for further use.
 - Preheat oven to 350.
 - Mix flax meal and water in a small mug, and set aside to form the vegan egg.
 - In a bowl add brown rice flour, arrowroot starch, guar gum, baking powder, pumpkin spice, turmeric & salt, and set aside.
 - In separate mixing bowl add avocado oil, maple syrup, sweet potato puree and vanilla and mix well with whisk.
 - Add vegan egg to wet ingredients and mix until incorporated.
 - Using wooden spoon, slowly add dry ingredients to wet ingredients and mix slightly (about 8 strokes).
 - Slowly add milk. Mix just until incorporated, you want the batter to still be lumpy.
 - Add diced apple and stir until incorporated.
 - Spoon into greased muffin tins about ¾ up the muffin cup.
 - Sprinkle with cinnamon sugar topping.
 - Bake for 24-28 minutes or until toothpick comes out clean.
 - Let cool 5 minutes in the pan before putting muffins on a cooling rack.
