Orange Camu Camu Muffins Vegan

Cook Time: 25-28 minutes
Yield: 10 muffins
Ingredients:
- 2 tablespoons flax meal + 2 tablespoons water
 - 1 cup brown rice flour
 - ¾ cup arrowroot starch
 - 1 teaspoon guar gum
 - 2 tablespoon baking powder
 - 1 tablespoon camu camu powder
 - 1 teaspoon sea salt
 - ½ cup avocado oil
 - ½ cup maple syrup
 - ½ cup avocado pulp mashed
 - 1 tablespoon orange extract
 - ½ cup orange juice, fresh pressed
 
Directions
- Preheat oven to 350. Grease 10 muffin tins.
 - Mix flax meal and water in a small mug, and set aside to form the vegan egg.
 - In a bowl add brown rice flour, arrowroot starch, guar gum, baking powder, camu camu & sea salt, and set aside.
 - In separate mixing bowl add avocado oil, maple syrup, avocado mash and orange extract, and mix well with whisk.
 - Add vegan egg to wet ingredients and mix until incorporated.
 - Using wooden spoon, slowly add dry ingredients to wet ingredients and mix slightly (about 8 strokes).
 - Slowly add orange juice. Mix until incorporated.
 - Spoon into greased muffin tins equally.
 - Bake for 24-28 minutes or until the toothpick comes out clean.
 - Let cool 5-10 minutes in the pan before removing muffins from the pan, and placing them on a cooling rack.
