12-15 pound turkey

2 carrots, chopped 

2 apples, quartered and cored

2 lemons, quartered

1/4 cup olive oil

1 tablespoon dried parsley

1 tablespoon dried rosemary

1 teaspoon dried minced garlic

1 teaspoon pepper

2 teaspoons sea salt

1 teaspoon dried thyme

1 cup chicken broth

1 cup water

  1. Preheat oven to 325. Have a big enough roasting pan ready.
  2. Remove the giblets, neck and excess skin from defrosted turkey. Stuff turkey with carrots, apples, and lemons. Place the turkey on the roasting rack and put any extra of the carrots, apples and lemons in the bottom of the pan.
  3. Rub olive oil all over the skin of the turkey.
  4. Sprinkle parsley, rosemary, garlic, pepper, salt, and thyme evenly over the turkey and massage into the skin.
  5. Pour the chicken broth and water in the bottom of the pan. Place turkey into the oven.
  6. Every 30 minutes spoon or use a baster, to pour the water and chicken broth mixture over the turkey to keep moist.
  1. Cook for 3-4 hours or until the internal temp is 165 degrees.
