Vegan Peppermint Brownies
Vegan Peppermint Brownies

Yield: 12-16 brownies
Ingredients:
- 1¼ cup brown rice flour
- ¾ cup arrowroot starch
- ¾ cup raw cacao powder
- 2 cups beet sugar
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- 1 cup water
- 1 cup olive or avocado oil
- 1 teaspoon peppermint extract
Directions
- Preheat oven to 350°F.
- Grease a 13×9 pan.
- In a bowl place brown rice flour, arrowroot starch, cacao powder, beet sugar, baking powder and salt and mix with a wooden spoon.
- Add water, oil, and peppermint to dry ingredients and stir about 25-35 strokes.
- Pour batter into greased pan, spreading evenly, and bake for 22-26 minutes.
- Let cool completely before cutting or serving.
