Vegan Espresso Brownies

Espresso Brownies

Cook Time: 22-26 minutes
Yield: 12-16 brownies
Ingredients:
- 1¼ cup brown rice flour
 - ¾ cup arrowroot starch
 - ¾ cup raw cacao powder
 - 2 cups beet sugar
 - ¼ cup espresso grounds
 - 1 teaspoon baking powder
 - 1 teaspoon guar gum
 - 1 teaspoon sea salt
 - 1 cup water
 - 1 cup olive or avocado oil
 
Directions
- Preheat oven to 350°F
 - Grease a 13×9 pan.
 - In a bowl place brown rice flour, arrowroot starch, cacao powder, beet sugar, espresso, baking powder, guar gum and salt and mix with a wooden spoon.
 - Add water and oil to dry ingredients and stir about 25-35 strokes.
 - Pour batter into greased pan, spreading evenly, and bake for 22-26 minutes.
 - Let cool completely before cutting or serving.
