Basic Paleo Sandwich Bread
Ingredients:
- 1 1/2 cups water
 - 1/4 cup honey (or maple syrup)
 - 2 tbsp dry active yeast
 - 1/4 cup avocado oil
 - 1 tbsp Apple cider vinegar
 - 3 eggs
 - 2 1/2 cups cassava flour
 - 1 1/2 cups arrowroot starch
 - 1/2 cup almond meal
 - 1 tsp guar gum
 - 2 tbsp baking powder
 - 1 tsp sea salt
 
Directions
- Preheat oven to 350°F. Grease loaf pan or 15 muffin tins.
 - Heat water to 110°F, add honey (or maple syrup) and yeast, then let stand for 10 minutes.
 - Add oil, vinegar and eggs and stir.
 - Add cassava flour, arrowroot, almond meal, guar gum, baking powder and sea salt and mix until dough forms. Should be consistency of soft serve ice cream.
 - Pour into prepared pan.
 - Bake loaf for 50-55 minutes, or, bake rolls in the muffin tins for 25-28 minutes.
 - Let it cool completely before serving or slicing.
